These gingerbread cookies are relatively simple to make and they are great fun to decorate. Who knew that gingerbread can be so rewarding? It’s a lovely dough to work with, it smells fantastic when it is baking and it tastes great too!
I’d never tried ‘proper’ gingerbread until I made these cookies last week. I have tried those ready made gingerbread house kits that you get. The ones that are ready for assembly, where you stick the ready made gingerbread walls and roof together with gloopy icing and decorate with neon colored jelly sweets – but that’s not real gingerbread! This is though!
I made up a couple of batches over the weekend using different recipes that I found in Christmas magazines and cookbooks. I ended up with this, a combination of a few recipes which results in a darkish gingerbread with a good crisp texture.
This gingerbread cookie recipe makes approx 20 – 30 cookies (depending on size of cookie cutter)
The royal icing recipe make 300 grams of icing (plenty to decorate lots of cookies!)
