If you are anything like me, mornings are hectic. Anybody who knows me also knows that I am not good in the morning. I am especially not good before I have had a cup of tea and something to eat. That is why these Good Morning Cookies are so good. They are full of oats, so can be relied on to give you a slow release of energy throughout the morning. They taste great too. Although they contain some processed sugar they don’t contain the same amount of sugar than most cookies do – their sweetness also comes from the fruit and honey.
This recipe is one that I adapted from Olive magazine. Obviously you can further adapt this recipe by swapping the kind of fruit that you add to the mix. Chopped up apricots are a favorite of mine. I also experimented with adding chopped nuts but felt that the added calories weren’t worth their addition. These Good Morning Cookies really are so simple to make and will keep in an airtight tin for 3 or 4 days. I really recommend that give them a go!
