These Mince Pies are made with a deliciously flaky (but plain) pastry which is offset well by the rich mincemeat filling! They are topped with a small pastry star and sprinkled with icing sugar.
As the mince pies do not have a full lid, just a pastry star, you will find that the mixture may bubble up whilst cooking and this leaves a chewy top to the edges of the pastry. I like this but if you don’t you can always use less mincemeat in the pies.
I used homemade pastry for these mince pies but of course if you wanted to you could make them with store brought pastry. However, as the homemade mincemeat that I used was particularly rich, this very plain flaky pastry works very well.
Once upon a time I would have also urged you to make your own mincemeat as the shop brought ones aren’t nearly as nice as home made. However, things have changed and if you do not have time to make your own mincemeat, you can now but some really nice luxury brand mincemeat.
